Mick Parsons is just at home reading poetry on Mount Buffalo as he is sitting in the shade of an ancient olive grove overlooking the medieval Italian town of San Gimignano, reciting a favourite verse. The former Wagga boy, along with partner, Jackie from Norwich in the UK, are the team behind the dynamic Hedonistic Hiking that offers all-inclusive small-group guided walks through some of the most beautiful parts of Australia and Europe.
The poignant poetry and book readings are an extra touch that embellish the feel of a place after an outdoor gourmet feast dining on local produce. Mick says when he was growing up in Wagga, he always had a sense of adventure and wanted to see the world.
“I trained as a chef and this skill took me all over Australia, I loved to discover new places, then I looked further afield and saved enough money to go to Europe where a job with Contiki gave me the opportunity to work and see many, many countries,” he says.
